Dave Tuomisto, born and raised in Arizona with summers spent in Mexico, developed a passion for authentic Mexican cuisine. This agricultural richness, historically supporting Mexico’s silver mining industry, provides the foundation for the Bajio’s unique cuisine. The region’s fertile basin, aptly nicknamed “Mexico’s Breadbasket,” yields an abundance of corn, berries, squash, beans, and fruits, which heavily influence local dishes. Beyond its agricultural significance, the Bajio region also played a crucial role in Mexico’s history, serving as a hub for intellectuals and revolutionaries who spearheaded the country’s independence movement from Spain in 1810.

Today, Dave brings the authentic flavors of the Bajio region to Orem, Utah, with his restaurant, Milagros.
