This familiar truck was previously owned and operated by La Costena, which closed last year. Primos keeps its menu straightforward, focusing on classic Mexican favorites: tacos, tortas, tostadas, burritos, quesadillas, and hamburguesas. While some might feel indifferent to another Mexican food truck, Primos distinguishes itself with its convenient location and delicious food. For those in Northwest Wichita, it’s a significant advantage to have a local option for authentic Mexican cuisine, avoiding the often-dreaded drive to East Wichita.
On a recent visit, a selection of tacos and a tostada were sampled: a ceviche tostada, a shrimp taco, an al pastor taco, and a tripa taco.
The shrimp taco was the standout dish. The shrimp were finely diced, ensuring a perfect balance of shrimp in each bite, complemented by a flavorful mayo-based sauce. This attention to detail elevated the taco to a truly enjoyable experience.
The al pastor taco boasted well-balanced seasoning, neither overly sweet nor salty. The tripa taco offered a satisfyingly crisp texture, thanks to a slight char from the grill.
The only disappointment was the ceviche tostada. The ratio of fish to toppings was skewed, with an overwhelming amount of onions and cucumbers masking the flavor of the fish.
Despite the tostada setback, the excellent tacos make Primos Mexican Food Truck a worthy destination, especially for Northwest Wichita residents craving quality Mexican food. The convenient location and delicious tacos make it a perfect weekend stop after a shopping trip.
